Best to chop in small squares the shrimps for this dumpling, because the flavor will not be as strong if you mince them

Serves 25 Pieces

Ingredients
250 g chicken fillet (thigh part), minced
250 g shrimp, peeled and chopped in small squares
1 jicama, chopped in small squares
1 carrot, chopped in small squares
1 onion, chopped finely
3 spring onions, chopped finely
1 tbsp oyster sauce
Sugar
Salty soy sauce
1 tbsp sesame oil
White pepper
250 g sago flour

Wonton Wrap
25 pieces of wonton wrapper
1 medium-size carrot, grated
1 egg white, mixed

Dipping Sauce: Mix Well
5 tbsp chili sauce
Vinegar
Salt
Sugar
Water

Steps
1. Combine all ingredients except for sago flour, and mix well. Add sago flour, and blend well.
2. Take the wonton wrapper, and fill with the siomay filling, wrap. Top with grated carrot. Repeat until you use up all the siomay filling.
3. Place raw siomay into heated steamer, steam on low heat. When their color change, steam for awhile longer, then remove from heat.
4. Serve with the dipping sauce.

Porsi 25 Potong

Bahan
250 gram paha ayam fillet, giling
250 gram udang, kupas dan potong kotak-kotak kecil
1 bengkuang, potong kotak-kotak kecil
1 wortel lokal, potong kotak-kotak kecil
1 bawang bombay, potong kecil-kecil
3 batang daun bawang, potong kecil-kecil
1 sendok makan saus tiram
Gula cair
Kecap asin
1 sendok makan minyak wijen
Merica
250 gram tepung sagu tani
Adonan Kulit

Kulit pangsit
1 buah wortel lokal ukuran sedang, parut
1 putih telur, kocok

Saus: Aduk Rata
5 sendok makan cabai merah botolan cap Jempol
Cuka
Garam
Gula
Air

Caranya
1. Campur semua bahan kecuali tepung sagu tani, aduk rata. Tambahkan tepung sagu, aduk kembali hingga tercampur rata.
2. Ambil kulit pangsit, isi dengan campuran sagu tani, bungkus. Taburi parutan wortel di bagian atasnya. Lakukan hingga adonan habis.
3. Kukus dalam dandang panas di atas api kecil sampai adonan dan kulit pangsit berubah warna. Kukus sebentar lagi. Angkat.
4. Sajikan dengan saus.
