Recipe details -
Rice preparation -
For sticky rice -
500g short grain (sushi) rice
100ml rice vinegar
3 tbsp sugar
1tsp salt
Put rice in the pot/hob. Cover it approx. 1 inch / 2,5cm with water. Put on the lid. Start cooking on high heat, bring it to boil and then turn it to low. (Don't take the lid of at anytime while cooking). Leave it to simmer on low heat for about 15 - 20 min. Once it has cooked move it to a bowl, mix the rice vinegar with sugar and salt in a cup and pour over rice. Leave it to soak in for 5 min.
If the rice is sticking too much to the spoon or knife while laying the rice over nori leaf, soak the spoon/knife in some water.

Teriyaki glazed vegan schnitzel -
Fry's schnitzel fried on the pan, sliced up in strips.
Glazed with teriyaki sauce.
Sushi filling I used (You can substitute any of these) -
Bell peppers,
Avocado
Spring onions
Cucumber
Inari pockets
Sushi pickled ginger
Soy sauce
Wasabi paste
Cashew cream
Black sesame seeds
and of course SUSHI NORI
