This recipe for beef stewed in spicy coconut milk originated from Bukittinggi, West Sumatra. My family and I have tweaked it, using coconut sugar instead of granulated sugar and adding in bird’s eye chilies to give it more kick.

Serve 5

Ingredients
1 kg beef, cut into cubes
2 whole ripe coconuts
½ block of coconut sugar

Spice Paste
4 shallots
6 garlic cloves
Bird’s eye chilies; the more the spicier
2 thumb-sized pieces ginger
2 lemongrass stalks
2 thumb-sized pieces galangal
5 cloves
3 cardamom seeds
2 cinnamon sticks
5 lime leaves
½ tsp salt
Pepper

Steps
1. Soak grated coconut in water. Squeeze to extract 3 glasses thick coconut milk and 4 glasses thin coconut milk. Set aside.
2. Make spice paste from shallots, garlic, bird’s eye chilies, ginger, lemongrass, galangal, cloves, cardamoms, cinnamon, and pepper.
3. Cook beef in thin coconut milk seasoned with spice paste and lime leaves. Bring to a boil.
4. Simmer until beef becomes tender and thin coconut milk is reduced. Add thick coconut milk. Bring to a boil stirring occasionally. Lower heat and simmer until sauce thickens.
5. Sprinkle with salt to your liking. Add coconut sugar. Stir. Cook until spices and oil separate. Remove from heat. Serve.

Resep Rendang

Untuk rendang, daging utuh dipotong seukuran yang pas agar tidak mudah hancur karena akan lama dimasaknya.

Porsi 5 Orang

Bahan
1 kg daging sapi
10 gelas santan dari 3 butir kelapa tua
2 batang serai
2 lembar daun kunyit
2 lembar daun salam
3 lembar daun jeruk purut

Bumbu
10 butir bawang merah
6 siung bawang putih
10 cabai merah keriting
4 ruas jari lengkuas
2 ruas jari jahe
½ ruas jari kunyit
1 biji pala
2 butir kemiri
3 bunga cengkeh
Garam

Caranya:
1. Masak santan bersama bumbu halus (bumbu dasar rendang) bersama serai dan daun kunyit di atas api sedang.
2. Setelah santan kental dan bumbu terasa harum, masukkan daging. Masak terus sambil diaduk sesekali supaya daging tidak gosong dan santan berminyak. Kecilkan api, dan aduk sesekali.
3. Masak terus hingga santan kering dan berwarna coklat kehitaman, matikan api. Sajikan.

Tips & Trik
1. Daging utuh dipotong seukuran yang pas agar tidak mudah hancur karena akan lama dimasaknya.
2. Potong kasar bawang merah, bawang putih, cabai merah keriting, lengkuas, jahe, kemiri dan cengkeh di dalam food processor sebentar sebelum diulek bersama kunyit hingga benar-benar halus seperti pasta.
3. Sajikan secukupnya atau biarkan di wajan untuk dimasak terus esoknya. Dapat juga disimpan di kulkas untuk dipanaskan setiap saat.
